TOMATO CASHEW SPREAD WITH HERBS DE PROVENCE

The tomato cashew spread with herbs de Provence was created together with the cashew spread with herbs and garlic. It is also easy and quick to prepare and very tasty and can be visually attractive when you decorate it. If you are a culinary lazybones and do not want to peel and fry the onion and garlic, then you can use dried onion and powdered garlic. Just put the dried onion into the glass blender together with coloured peppercorns and herbs de Provence to make this cashew spread even faster and less complicated to prepare.

ingredients

  • 150 g cashews
  • 100 g vegan yoghurt (I`ve chosen the coconut yoghurt)
  • 3 teaspoons tomato puree
  • 25 g onion
  • 1 clove of garlic
  • rapeseed oil for frying
  • 2 teaspoons herbs de Provence
  • 1 teaspoon coloured pepper
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • to garnish: chopped cashews, dried and ground tomatoes, coloured peppercorns, fresh thyme and fresh rosemary

Pour hot water over the cashews for at least several minutes. Peel the onion and garlic, wash and chop them and then fry for a while with rapeseed oil. Grind together the herbs de Provence and coloured pepper into dust. Put the strained cashews, yoghurt, tomato puree, lemon juice, fried onion and garlic and the mixture of spices into the glass blender. Blend all ingredients until smooth. Garnish the cashew spread with colourful peppercorns, chopped cashews, dried and ground tomatoes, fresh thyme and fresh rosemary. Enjoy the nice decoration and the delicious taste of the cashew spread.
