BANANA CHOCOLATE GRANOLA

Noshing a homemade granola is a good way to kick start your morning. The banana chocolate granola will provide a lot of energy and prompt you to act. Chocolate and oat flakes are a great source of magnesium necessary in stressful everyday situations, and bananas and raisins will provide potassium, as dried fruits contain the most. The banana chocolate granola is therefore not only a meal rich in vitamins and microelements, but also a feast for the taste buds, which I recommend especially to those who prefer a sweet breakfast.

ingredients

  • 230 g oat flakes
  • 1 small very ripe banana
  • 6 dates
  • 100 g Brazil nuts
  • 2 handfuls of raisins – e.g. Thompson Jumbo
  • 100 g unsweetened banana chips
  • 60-70 g dark chocolate (71% cocoa)
  • a big handful of coconut slices
  • 1 tablespoon of coconut oil
  • a pinch of salt
  • a pinch of cinnamon

Remove pits from the dates if necessary and pour boiling water over the dates and let them sit for several minutes. Rinse the oat flakes in a sieve and place in a bowl. Rinse the Brazil nuts, cut them into smaller pieces and add to the oat flakes. Rinse also the banana chips, coconut slices and raisins. Dry the raisins with a paper towel.

Drain the dates and blend them with banana and coconut oil. Add the blended mass to a bowl with oat flakes and Brazil nuts, add banana chips and coconut slices, as well as a pinch of salt and cinnamon. Stir everything thoroughly, place evenly on a baking tray lined with baking paper and put in the oven preheated to 140 degrees for 20 minutes.

After 20 minutes stir the granola thoroughly with a wooden spoon and bake for 15 minutes. Then repeat the procedure, raise the temperature to 170 degrees and bake for 10 minutes. Then stir everything once again and bake for another 10 minutes. Check that the granola does not burn.

In the meantime prepare chocolate shavings using a regular vegetable peeler.

When the granola has cooled down, add the raisins and chocolate shavings.

Eat this delicious granola for breakfast or brunch with natural yoghurt or hot plant milk, in which the chocolate chips will beautifully dissolve. The banana chocolate granola tastes very good also without any milk, and gourmands will probably nosh it between meals when they will feel an urge to eat something sweet, and there will be no vegan sweets in the cabinet.
