SPELT HAZELNUT PUDDING

Children often grizzle during mealtime and it is difficult to convince them that, for example, spelt flakes are healthy. However, if we combine them with hazelnuts and dates, I think that many kids will ask for their preparation once again, and pout and grimaces will go out of the window. I also think that spelt hazelnut pudding will tickle the fancy of many parents, grandmas, grandpas, uncles and aunts too, so actually it is a healthy dessert for the whole family.

ingredients

    a few servings (4-5)
      • 180 g spelt flakes
      • 500 ml rice-hazelnut drink + 125 ml for blending
      • 120 g hazelnuts
      • 120-140 g dried dates (depending on the prefered sweetness)
      • a pinch of salt (optional)
      • chopped hazelnuts and mint leaves or lemon balm for garnish (admittedly I doubt any toddler will be tempted to eat them, but green is such a positive colour and very pleasing to the eye, so it is worth adding if you just have fresh mint / lemon balm at home)

      recipe

      Rinse spelt flakes in a sieve and cook with the rice-hazelnut drink for about 10 minutes. Rinse also the hazelnuts and roast them in a dry frying pan to extract a nice taste and aroma. Then chop and grind them to dust. Wash the dates, remove stones if necessary and soak for at least 10 minutes in boiling water. Place all ingredients in a bowl and blend into a smooth cream with an extra portion of rice-hazelnut drink.

      You can also add a pinch of salt.

      Garnish with chopped nuts for crunchiness and with mint / lemon balm leaves (optional).
