Chia balls with bananas and dried apricots

It's time for a dessert! It should be very sweet of course, and the chia balls with bananas and dried apricots are just like that. I recommend them to all foodies who need very sweet taste experiences. I added fried bananas to the chia balls, but you can go a healthier path and just cook them in a little water for a while. Obviously you can make it raw by adding raw bananas and a little more lemon juice to preserve them in a natural way and to stop the process of browning and spoiling. The strong point of this dessert are the chia seeds, which are known for their nutritional properties and health benefits.

ingredients

    23 chia balls (depending on their size)
      • 2 very ripe bananas
      • 10 dried non-sulfated apricots
      • 5 heaped tablespoons coconut flakes
      • 80-100 g almond flour
      • 1 tablespoon lemon juice
      • a pinch of salt
      • a big pinch of dried ginger
      • 1 tablespoon coconut oil for frying
      • chia seeds for coating (I used about 40 g)

      recipe

      Pour hot water over dried apricots and soak for several minutes. Wash the bananas and cut them into slices. Then fry the banana slices with coconut oil. Add salt, dried ginger and lemon juice.* Mix coconut flakes into a smooth mousse. Strain the apricots and add together with the fried or cooked or raw bananas to the coconut mousse, then blend everything together precisely. Add the almond flour and stir thoroughly by hand. Put the mass into the fridge for half an hour to cool and harden. Form balls and coat them with chia seeds. From time to time dip your fingers in a previously prepared bowl with water so that they do not stick and it will easier to form the balls.

      * To make the dessert healthier, cook the bananas in a little water for a few minutes and add more almond flour later if necessary. To make the dessert raw do not fry and cook the bananas - just add a little more lemon juice to preserve them naturally and to stop the process of browning and spoiling. Also, add more almond flour if necessary. Pour lukewarm water over the apricots.
