TANDOORI MASALA POWDER

Indian spices not only make the dishes tasty and aromatic, but also easier to digest. You can use ready-made spice mixes available in stores or at Asian food stands, but it is worth preparing your own version. In addition, it is not strictly defined in what proportions the spices should be used. When you prepare your own version of tandoori masala, you can compose the spice mix according to your flavour preferences. Masala in Hindi is a mix of spices or herbs. It is used not only for seasoning food, but also as a marinate.

An interesting fact is that many Indian films are called masala movies. Such a movie is a mix of many genres, e.g. comedy, romance, action, drama, melodrama, musical :)

ingredients

    for 40 g
      • 3 tbsps coriander seeds
      • 2 tbsps Indian cumin seeds
      • 1 tsp ground turmeric
      • 1 tsp fenugreek seeds
      • 1 cinnamon stick
      • 10 cloves
      • 2 whole grains of green cardamom
      • 1 whole grain of black cardamom
      • 1 tsp chilli flakes
      • ½ tsp fennel seeds
      • 1 tsp black peppercorns
      • 1 whole nutmeg (you need ½ tsp ground nutmeg)

      recipe

      First grind the nutmeg and set half a teaspoon of it aside. You can store the rest of the ground nutmeg separately and add, for example, to gingerbread cookies or coffee :)

      Remove the seeds from the black and green cardamom grains and grind them thoroughly into powder along with coriander, fenugreek and fennel seeds, Indian cumin seeds and black peppercorns, as well as chilli flakes, cloves and the cinnamon stick. Combine the ground spices with the ground turmeric and nutmeg. You can store the tandoori masala in a tightly closed jar for up to several months.
