ALMOND COOKIES (NOT ONLY) FOR VALENTINE'S DAY

2022-03-06 15:22:08

Delicious and crispy, perfect for coffee, tea and cocoa, for work and for a trip, actually for any occasion, but especially on Valentine's Day ;) And the most important thing, the cookies are made with sugar. Oh yes! Sugar is coming back into favour, because after two years experience I must admit that there is no better sweetener in the universe than sugar. And the white wheat flour shouldn't be demonised. Surely, everything within reason and in moderation. I still use the whole grain products, and agave and date syrup are still my favourite sweeteners, while xylitol and other types of sweeteners such as erythritol are not any more.

ingredients

    for 18 cookies
      1 cookie = 87 kcals
        • 70 g almonds (with skin)
        • 5 tbsps powdered sugar
        • 150 g wheat flour type 400
        • 1 tbsp tapioca (or potato) flour
        • 3 tbsps vegan butter
        • 2 tbsps coconut cream
        • 1 vanilla pod or 1 tsp vanilla extract or vanilla sugar
        • 1 level tsp baking powder
        • a pinch of salt

        recipe

Rinse the almonds in a sieve, then roast them in a dry frying pan. When they cooled down, first grind them and then mix with the rest of the dry ingredients. Add butter, coconut cream, vanilla seeds and knead the dough until it is smooth. If it crumbles, add a little milk or water. If it is too sticky, add a little flour. Then roll out the dough quite thin and then cut out shapes, e.g. hearts. Put the cookies on a baking tray covered with baking paper and put them in the oven preheated to 170 degrees for 17-18 minutes.
