PUMPKIN SOUP

What could be more warming and uplifting than pumpkin soup? The warm and energizing colour and the harmonizing taste will surely warm you up from the inside out and boost your mood during the autumn months. I recommend it for dinner or supper after an evening walk :)

ingredients

    for 5-6 servings
      • 1 hokkaido pumpkin - 1090 g (weight of a hollowed out pumpkin)
      • 3 carrots (146 g)*
      • 1 small celeriac (80 g)
      • 2 parsley roots (20 g)
      • a few potatoes (350 g)
      • 1 onion (46 g)
      • 3 cloves of garlic (14 g)
      • rapeseed oil (10 g)
      • salt, herbal pepper, coriander, cinnamon
      • 1250 ml water
      • for serving: parsley, pumpkin seeds, chili flakes
        * weight of carrots and other vegetables after peeling

          recipe

          Wash and peel all vegetables (except for the pumpkin), then cut them as you like. Heat the rapeseed oil in a large pot, add the onion and fry for a while. Then add the remaining vegetables and fry for a few minutes stirring the vegetables from time to time. During frying add spices in the amount you prefer. I added 1 heaped teaspoon of salt and half a teaspoon of herbal pepper, cinnamon and ground coriander. After a few minutes pour the water, bring the soup to a boil, and cook it over low heat until the vegetables are soft. Then blend the soup, put it into bowls and sprinkle with pumpkin seeds, chopped parsley and chili flakes. Enjoy!
