Frozen dessert is a perfect idea for hot days when you need to cool down. Sweeten the dessert depending on the sweetness of strawberries - I suggest checking the sweetness during preparation of the dessert. My strawberries were quite sweet, so one banana was more than enough. You can sweeten the coconut milk with e.g. agave syrup, but if you do not like sweet desserts, just skip this ingredient and enjoy the natural sweetness of coconut milk. Instead of strawberries, you can of course use other fruits, e.g. mangoes, blueberries, raspberries, cherries.

Rinse the strawberries thoroughly and then freeze them with the banana cut into smaller pieces - preferably one day before. Put the coconut milk in the fridge for at least twelve hours. Blend the solid part of coconut milk with agave syrup and place it in the fridge again. Put the frozen fruits and the rice milk into a glass blender and blend until you get a smooth consistency. Put the frozen strawberry-banana mass into cups or glasses and add the chilled coconut cream. Decorate the dessert with strawberry slices, coconut chips and fresh mint leaves. Enjoy a nice refreshment!
