The strawberry season is still ongoing, so I've prepared a delicious and light salad that will be perfect for hot days such as now. I used vegan feta cheese for the first time and I am delighted with its taste, so I plan to introduce it to the menu of Flavours from Vega :) Thai basil has also made its debut in my kitchen, but the usual one will also be okay.

Mix all the dressing ingredients in a bowl. Rinse the pumpkin seeds in a sieve and roast them in a dry frying pan until they are lightly golden.
Rinse the spinach and basil leaves and put them on plates. Wash the cherry tomatoes and strawberries. Cut the tomatoes in half, and the strawberries into quarters, then place them on plates. Peel the onion, wash it and cut it into half-slices. Cut the feta cheese into small cubes. Add the onion half-slices and feta cubes to the remaining ingredients on plates. Sprinkle the salad with roasted pumpkin seeds and pour the dressing over it. Enjoy!
