OAT FLAKE COOKIES WITH NUTS AND RAISINS

If you want to sweeten your life a little bit, but you are on a diet or can't eat sweets with refined sugar, I recommend healthy oat flake cookies with nuts and raisins, which I sweetened with sugar made from flowers and herbs. This sugar is my great discovery of the year 2021. It has only 0,1 calories per serving and a low glycemic index, but it still tastes very pleasant and can match the taste and the sweetness of ordinary refined sugar. I am very happy about this discovery and I can't wait to try this sweetener in all kinds of desserts. Give it a try and let me know if you share my enthusiasm.

These are the ingredients of the floral-herbal sugar: juice concentrate of arenga flowers, citron extract, cornflower petals, lotus petals, rose petals, sweet chili, safflower petals, hibiscus petals, natural vanilla aroma (contains vanilla fruit), root of a beetroot, cardamom seeds, orange peel, sunflower petals.

ingredients

    15 cookies (depending on their size)
      • 250 g oat flakes
      • a handful of raisins
      • a handful of hazelnuts
      • a handful of coconut chips
      • 1 tablespoon tapioca flour
      • 3-4 tablespoons oat milk
      • 1 heaped tablespoon coconut oil
      • 1 teaspoon floral-herbal sugar or other sweetener (amount at your discretion)*
      • 1 tablespoon lemon juice
      • a good pinch of salt
      • a pinch of turmeric (optional)

      recipe

      Rinse the oat flakes in a sieve, press lightly to get rid of excess water and put them into a glass bowl. Rinse also raisins, nuts and coconut chips in a sieve. Put the raisins into a bowl with oat flakes, chop the nuts and put them in the bowl. Cut the coconut chips into smaller pieces and add to the bowl together with the rest of the cookie ingredients. Then stir everything together precisely. Prepare a small bowl with water to moisten your hands in it before you form each cookie. Shape the cookies into small balls and gently flatten them. Then place them on a baking tray lined with baking paper and bake at 170 degrees for about 25 minutes.

      * The floral-herbal sugar is very sweet, so be careful and don't add too much.
